Air Fryer Blueberry Muffins
These air fryer blueberry muffins are a cinch to make in the air fryer! So if you've ever wondered what you can bake in an air fryer, I'm here to tell you that muffins turn out great!
You'll be amazed at how air fryer muffins bake up so light and fluffy due to the circulating air of the air fryer, and with those blueberries bursting on top they look so pretty too.
INGREDIENTS:
- 1 egg
- 1/3 cup (65g) of sugar
- 1/3 cup (80 ml) of oil
- 2 tbsp (30ml) water
- ¼ tsp (1.25ml) vanilla extract
- 1 tsp (5 ml) lemon zest
- 2/3 cup (80g) flour
- 1/2 tsp (2.5ml) baking powder
- Pinch of salt
- ½ cup (75g) of blueberries
HOW TO COOK?
- Step 1
Mix together the wet ingredients in a large bowl, make sure to whisk up well since the butter and water can be difficult to combine if you don't whisk well.
- Step 2
In a smaller bowl whisk together the dry ingredients. Add the dry ingredients to the wet ingredients.
- Step 3
Then mix in the blueberries with a spatula or wooden spoon. You could really add any berry you like, just make sure they are cut to the same size as a blueberry if using larger berries like strawberries.
- Step 4
Line 1 cup oven-safe ramekins with parchment jumbo muffins papers. Scoop batter into papers with an ice cream scoop.
- Step 5
Place your muffins in your air fryer at 350F for 17 minutes.
