Pumpkin Spice Loaf with Maple Cream Cheese Glaze

Pumpkin Spice Loaf:

  • ¾ cup pumpkin puree
  • 2 large eggs, room temperature
  • ½ cup light olive oil
  • ½ cup buttermilk
  • 1 teaspoon vanilla extract
  • ½ cup white sugar
  • ½ cup brown sugar, packed
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon ginger
  • ¼ teaspoon nutmeg
  • Oil spray

Maple Cream Cheese Glaze:

  • 1 package cream cheese (8-ounces), room temperature
  • ½ stick unsalted butter, room temperature
  • ¾ cup powdered sugar
  • ¼ cup pure maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Chopped pecans or pumpkin seeds, for topping

How to Cook?

  • STEP 1

Whisk together the pumpkin puree, eggs, oil, buttermilk, vanilla extract, and both sugars until smooth.

Add the flour, baking soda, salt, cinnamon, pumpkin pie spice, ginger, and nutmeg. Stir with a spatula until combined.

Preheat the Hauswirt Air Fryer Oven, adjust temperature to 300°F, and press Start/Pause.

  • STEP 4

Grease 2 mini loaf pans with oil spray. Pour the batter into the loaf pans, filling each ⅔ full. Make any leftover batter into muffins, if desired.

Set temperature to 300°F and time to 32 minutes, put the loaf pan in then press Start/Pause.

Remove loaves when a toothpick inserted into the center of each comes out clean.

Allow loaves to cool to room temperature before glazing.

Beat the cream cheese and butter in a stand mixer until smooth. Add the powdered sugar, maple syrup, vanilla extract, and a pinch of salt. Beat until smooth.
